Osteria Vibrato is chef Charlie Mellor's return to a dining room of his own, and it opened on Greek Street in spring 2026 to an immediate buzz. Mellor made his name at The Laughing Heart, the Hackney restaurant and wine bar that ran for six years as an industry favourite, and here he channels that same instinct into something warmer and, by his own billing, timeless: a ristorante e bar built around the regional cooking of Italy.

Taking over the former Cinquecento site, it makes a strong case as a regional Italian restaurant in Soho. The kitchen roams from Piedmont to Sicily by way of Liguria and Sardinia, with handmade pastas such as tajarin, agnolotti and busiate sitting alongside fresh seafood and a wine list that celebrates organic growers across Italy and France. The room is intimate, with counter seats kept back for walk-ins.
