Rita's is a Soho restaurant serving modern American cooking built on seasonal British produce. Sustainability runs through the sourcing: the meat and fish are sustainably raised and traceable. Meat comes via HG Walter and Farmer Tom Jones in Herefordshire, and the fish is landed on the South Coast through Fin and Flounder, all under sustainable practices.
The kitchen takes the farm-to-table idea seriously, using fresh produce from local organic farms around London and from markets in Europe. The wine list follows the same line. The selection comes from producers working organically at the least, often biodynamically, and usually without chemical intervention. It is a place where the ethics behind the food are as considered as the dishes themselves.
